New Perspective

I obviously haven't posted for a long time, not sure why, busy with life? sounds like a good excuse, but I'm turning over a new leaf so to speak. as I realize it is a reminder of where I've been, What I've done, and who I'm becoming. It doesn't really matter if anyone reads it... I will, and it will be out here as a reminder.

My youngest sister reached out to me a few months back and wanted to know if I could make a wedding cake for her daughter Ashley who was getting married (yesterday) I was a unique request in that Ashley and her fiance wanted it to be a cheesecake.  I told her I would be happy to, not realizing that cheesecake was an entirley different animal than a regular wedding cake. It had to be supported structurally with acrylic plates between each layer, as it was so dense and heavy.  Each tier was composed of two cheescakes. on inverted on top of the other. They take almost 5 hours to bake one cheesecake, so the time constraints were a lot different as well.

I started baking and freezing them about 2 weeks ago. and when the froze because of how dense they were, and how much moisture they froze like a solid block of Cheescake. It was a big learning curve, and took a lot longer than I had originally anticipated. Thawing them out also took a long time, it took almost 3 days in the fridge to thaw out the bottom tier.

Happily I was able to make it turn out, It wasn't exacly what I had originally envisioned, but my niece was happy with the results, and I have to say it was one of the best tasting wedding cakes I've ever had!
